Split fava beans are used in Middle Eastern cuisine to make hummus, dals or falafels. Split fava beans are a convenient option as they don’t require as much preparation. Their skins have been removed and they do not need soaking before cooking.
They soften when cooked to add a soft texture and nutty flavour to curries, soups and stews. When blended, they are creamy – perfect for a smooth hummus or thick lentil dal.
